Grape Cultivation

The journey of every great wine begins in the vineyard. Egypt’s warm climate, abundant sunshine, and mineral-rich soils provide the perfect conditions for growing a variety of grapes. Our vineyards are located in regions known for their fertile land, where we grow indigenous Egyptian grape varieties alongside international favorites. We take great care in selecting the best grapevines for our vineyards, ensuring that they are well-suited to the local terroir. Sustainable farming practices are a cornerstone of our cultivation process. From the careful use of water resources to eco-friendly pest control, we are committed to preserving the land for future generations while producing the finest grapes for our wines.

Harvesting

Timing is everything when it comes to harvesting grapes. At PharaohWine, we meticulously monitor the grapes as they ripen, checking for sugar levels, acidity, and flavor development. Our harvest takes place at the peak of ripeness, when the grapes have reached their full potential. We use both hand-harvesting and machine-harvesting methods depending on the vineyard and the type of wine being produced. Hand-harvesting is ideal for delicate grape varieties that require gentle handling, while machine-harvesting is efficient for larger vineyards. The harvested grapes are quickly transported to the winery to ensure freshness, where they are sorted to remove any imperfect fruit.

Crushing and Fermentation

Once the grapes arrive at our winery, they undergo the crushing process. For red wines, the grapes are crushed with their skins, as the skins contribute to the color, tannins, and flavor of the wine. For white wines, the grapes are pressed to separate the juice from the skins. After crushing, the fermentation process begins. Yeast is added to the grape juice, converting the sugars into alcohol and carbon dioxide. This is a crucial stage where the natural aromas, flavors, and structure of the wine develop. Depending on the wine variety, the fermentation process can take several weeks. We closely monitor temperature and yeast activity during this stage to ensure the wine ferments smoothly and develops the desired characteristics.

Aging and Maturation

After fermentation, our wines enter the aging process, where they develop depth, complexity, and subtlety. The choice of aging vessel plays a significant role in shaping the final flavor profile of the wine. We use a combination of oak barrels and stainless steel tanks for aging, depending on the type of wine. Oak barrels add notes of vanilla, spice, and toast, while stainless steel tanks preserve the wine’s freshness and purity. Some of our red wines are aged for up to several years in oak barrels to achieve a rich, full-bodied flavor. During this period, the wine undergoes slow oxidation, softening the tannins and enhancing the complexity of aromas. Our winemakers regularly taste the wines throughout the aging process to determine the optimal time for bottling.

Blending
Blending is an art that requires a fine balance between science and creativity.
